So I don't yet have video on my nextstation.

I'm wondering how long from the time I press the power button or from the startup chime until I'd see something on the display - assuming I had a working vga adapter & monitor that could sync.

Are there any options to run the machine headless that would turn off the display and leave it off on boot?

No more than a few seconds before the video is driven by the monitor.  There will be some switch over and blanking as the OS comes up but that will be brief.

Not really.  These aren't server systems.  If the system is otherwise correctly configured, you should be able to ping it once it's up.
